Margotto of Michelin fame brings tasting menus, truffles and burgers to Hawaii

HONOLULU (HawaiiNewsNow) – Margotto in Ala Moana is the sister restaurant of Michelin Guide restaurant Margotto in Tokyo. They’ve brought their luxurious dining experience to Hawaii along with affordable options.
Executive Chef Shiori Okuya and owner Robert Hori joined HNN’s Sunrise to talk about their offerings, from $200 tasting menus and an extensive selection of fine wines to affordable ala carte dishes available for delivery.
Chef Okuya showcased a lamb dish, which she smokes with straw briefly to highlight the natural good fragrance and remove unwanted gaminess. She uses a traditional French technique called arrosage, where the chef slowly bastes lamb with melted butter, locking in the lamb’s juiciness while enhancing its flavor, especially with mirepoix, a mix of aromatic vegetables and herbs.
She serves it with sauce made from the lamb’s bones, roasted and simmered with mirepoix and broth for three hours to extract a deep complex flavor.
Margotto has won several awards since arriving on the scene, including Wine Spectator’s Award of Excellence in 2023 and 2024.
“We want to be the most delicious restaurant. In order to be so, so much effort has been made both in Tokyo and in Honolulu, for example, we won’t list any item on menu unless it passes the tasting test which normally goes over 10 times per item,” said Hori, who said he hopes diners see Margotto as a friend’s home they can visit for good food.
In addition to luxury dinners, Margotto offers an ala carte menu with dishes starting at $20 and quality burgers for delivery.
“We started with only a $200 tasting menu, some said it’s cheap but many said too expensive,” Hori said. “We encourage guests to pair with truffle as being a truffle centric restaurant, and as you know truffles are the second most expensive ingredient in the world after saffron, it could be pricy.”
Margotto also has a champagne counter that opens on Thursday to Saturday til late.
